Nose: Peach and oak form a magnificent combination. Big, bountiful tropical fruits merge with dark polished wood. A lemony, hoppy, almost IPA-like citrus character drives the background. Smoke dwells around the scenes, amplifying the fruits with an incense-like quality - very floral and aromatic rather than heavy or spicy. The profile is dominated by fruits - fruit salad sweets, peach rings, dried mango, with a little touch of vanilla cheesecake right at the end.

Palate: Fruit syrup leads the way, with mango, peach, and almost plump raspberry notes. The saltiness pushes through, with the fruit stepping back to allow barrel spice, fruit essences, and peppery fizziness to emerge. Vanilla pods provide sweetness, while gentle notes of cassia, gentian root, ginger, and a touch of liquorice add complexity and depth.

Finish: The smoke finally gets its chance to shine here. A little more coastal, salty and industrial than you might expect - although the latter note is very subtle and nuanced. The fruity character persists throughout, creating a beautiful balance of sweet and maritime qualities.
